Crispy Quinoa Patties are a versatile, meatless option. Filled with spinach and spices make these healthy, filling, and tasty. Freezer friendly and great for meal prep! Serve on a salad, in a pita, as a side dish, or on their own with a little hot sauce and avocado.
What You'll Need for this Recipe:
- Quinoa
- Eggs
- Red Onion
- Parmesan Cheese - can substitute a different shredded cheese of choice
- Spinach
- Breadcrumbs
- Olive Oil
- Salt, Pepper, and Garlic Powder
How to Make the Quinoa Patties:
- Cook the Quinoa.
- Toss the hot quinoa with the spinach to wilt.
- Add remaining patty ingredients. Add the eggs, onion, garlic, salt, pepper, breadcrumbs, and cheese. Mix together and allow mixture to sit for a few minutes so the liquid absorbs. The mixture should be moist enough to form into patties.
- Form patties. Scoop about ¼ cup of the mixture and form into patties using your hands. It will be a little sticky and I find using wet hands helps.
- Cook in a skillet. Heat the olive in a large skillet over medium heat. Cook patties for 8-10 minutes on each side (covered) until browned and golden.
- Bake in the oven. Or, place patties on a baking sheet and brush tops with oil. Bake patties in a 400°F preheated oven for 15 minutes until golden.
- Serve and enjoy!
Can the Patties be Frozen?
Yes! They can be frozen before or after cooking.
- Before Cooking: Lay the formed, uncooked, patties on a baking sheet in the freezer for 4-6 hours until frozen. When frozen, you can place in an airtight bag. To cook, thaw in the fridge overnight and follow regular cooking instructions.
- After Cooking: Cook the patties according to instructions. Once cooled, place the patties on a baking sheet in the freezer for 4-6 hours until frozen. When frozen, place the patties in an airtight bag. To reheat, thaw in the fridge overnight and bake in a 350°F oven until heated through.
How Do I Store Leftover Quinoa Patties?
Leftovers can be stored in an airtight container in the fridge for up to 5 days.
What Should be Served with the Patties?
- With or even on top of a salad.
- As a side for a protein of choice - chicken and fish are my favorite.
- One or two patties with a runny yolk fried or poached egg on top.
- On their own, drizzled with hot sauce, or with some beautiful avocado.
- Served with a dip or sauce - like tzatziki.
- In a pita or on a sandwich.

Ingredients
- 1 cup uncooked quinoa
- 4 eggs
- 1 small red onion, minced
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- ½ cup grated parmesan cheese, can substitute other cheese
- 2 cups fresh spinach, finely chopped
- 1 cup breadcrumbs
- 1 tablespoon olive oil
Instructions
Make the Patties
- Cook the Quinoa. Cook the quinoa according to package directions.
